Cranberry Orange Bread

Ingredients

  • 3 cups all-purpose flour

  • 2 teaspoons active dry yeast

  • 1/2 teaspoon salt

  • 3 tablespoon milk powder

  • 1/2 cup granulated sugar

  • 3/4 cup warm milk (105°F-115°F)

  • 1/2 cup orange juice

  • 1 tablespoon orange zest

  • 1/4 cup unsalted butter, soft

  • ½ cup orange jam

  • 3/4 cup dried cranberries

  • Optional Orange Glaze:

  • 1 cups icing/confectioners’ Sugar

  • 1 Tablespoons milk

Directions

  • In a large bowl, whisk together flour, yeast, salt, milk powder and sugar.
  • In a separate bowl, whisk together milk, orange juice, orange zest, and melted butter.
  • Add the wet ingredients to the dry ingredients and Knead for 6 to 8 minutes. Dough should be soft. Transfer the dough to an oiled bowl.
  • Cover the bowl and let rise in a warm place for about 1 hour, or until doubled in size.
  • Knead again on a floured surface. Add cranberries. Grease  loaf tin.
  • Preheat the oven to 350°F (175°C).
  • With the help of a rolling pin, roll out  into a rectangle, no wider than the loaf pan you are using. Smear with orange jam.
  • Roll the dough towards you, tightly. Pinch seams to seal. Place the roll in the greased loaf tin with the seam side down. Cover and keep it to rise for 1 ½ hours.
  • Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  • While the bread is baking, prepare the glaze by whisking together orange juice and powdered sugar until smooth.
  • Brush the warm bread with the glaze.
  • Let cool slightly before serving.
  • Store leftover bread in an airtight container at room temperature for up to 3 days.
