Classic Eggless Cinnamon Rolls

Ingredients

  • 1/2 cup warm milk

  • 1/4 cup lukewarm water

  • 1/4 cup melted butter

  • 1/4 cup castor/powdered sugar 

  • 1 1/2 teaspoon dry yeast

  • For the  dough

  • 2 cups All-purpose Flour (maida)

  • 1/4 teaspoon  Salt 

  • 1 teaspoon vanilla

  • For the cinnamon filling

  • 3  tablespoon soft Butter 

  • 1/2 cup  Brown Sugar

  • 1 tablespoon Cinnamon

  •  1/2 Tablespoon Cornstarch

  • For the Cream Cheese Glaze

  • 1/2 cup  Cream Cheese 

  • 3 tablespoon  Powdered Sugar 

  • 1/2  teaspoon Vanilla extract

  •  1 tablespoon milk (For a thinner glaze add more milk.)

Directions

  • In a small bowl  add water and microwave for 10 seconds and add 1 tsp sugar and active dry yeast. Mix quickly and let this bowl sit in a warm place for 12-15 minutes and let the yeast get activated.
  • In the meanwhile, in a large bowl, add flour, soft butter, remaining castor sugar and warm milk.
  • Add the activated yeast mixture to the flour mix. Mix with the help of a wooden spoon until a pasty mixture is formed.
  • Knead the dough very well for at least 6-8 minutes. 
  • Brush a little bit of butter on the bottom of a clean mixing bowl and transfer the soft dough in it.
  • Cover with cling wrap and keep it in a warm place for 1 hour until the dough has doubled.
  • After 1 hour the dough would have risen.
  • Punch the dough down to knock out the air.
  • Spread the dough as a large square of 10 X 10 inches.
  • Smear with a melted butter. Mix ground cinnamon, cornstarch and powdered sugar. Sprinkle this mix evenly over the butter smeared roll.
  • With the help of pizza cutter About 1 inch apart cut 8 to 10 long strips  and roll them tightly and place them in a greased baking dish, leaving space for them to rise.
  • Cover and let rise again for another 1  hour.
  • Preheat the oven to 350°F (190°C). Bake the rolls for 20-25 minutes, or until golden brown.
  • While the rolls are baking, prepare the glaze by whisking together powdered sugar, cream cheese,  milk and vanilla extract until smooth.
  • Drizzle the warm rolls with glaze and enjoy!

Notes

  • Use warm ingredients for the dough to activate the yeast and ensure proper rising.
  •  For extra fluffy rolls, let the dough rise twice before baking. The first rise after kneading, and the second rise after shaping the rolls. This ensures soft texture in every bite.
  • Adjust the sweetness of the filling and glaze to your liking.
  • Get creative! You can add other nuts, chocolate chips, or even dried fruit to the filling.
